Lemon Blueberry Shakeology Protein Bars

Caution: these are really good! I mean… REALLY good! I feel like I’m eating lemon cake – if you told me I was getting 12 grams of protein in each bar I’d laugh at you.

Using my favorite pan this makes 12 servings (a 9″ x 13″ is perfect for this recipe)


120g (1 cup) oat flour
4 scoops of vanilla shakeology
½ cup or 4 oz container of unsweetened applesauce
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1/2 cup Xylitol (1/4 cup if using Stevia)
1 tsp vanilla
zest from 1-2 lemons
juice from 2-3 lemons (the amount of zest and juice is based on how lemonly and tart you like your bars)
1/2 cup non-fat Greek Yogurt
4 egg whites
1/2 cup unsweetened almond milk
1 cup fresh or frozen blueberries


Preheat oven to 350 degrees. Mix all dry ingredients, lemon zest and lemon juice together in a bowl. Add vanilla, egg whites, greek yogurt and almond milk and mix well. Pour into greased 9′ x 13′ pan. Add a cup of blueberries evenly. Bake for 30 minutes.
